This Qi-Cultivating, Energizing Pork & Beef Bone Broth Is The Perfect Winter Meal

… winter comfort food. Koreans traditionally have this in the winter time to restore the body from the harsh winter and gain energy to continue working. This meal helps cultivate qi or energy, and keeps your body warm during the winter.

Koreans are extremely sensitive to taste and smells in foods especially meats like chicken and pork. If you don’t like pork because of the taste and smell, this recipe contains ways to combat this through specific methods of cooking.

Ingredients:

  • 2 pounds of pork rib tips

  • 2 pounds of beef short ribs

  • 10-15 scallion heads, the more the better (helps with the meat smell)

  • 8 cups of rice water (optional — wash white rice that you may use to prepare sticky rice and use the water that’s used to wash the rice after 2-3 rinses. Throw out the first rinse).

  • 6 cups of water (or 14 if you will not be using rice water)

  • Glass noodles or thin white noodles or sticky rice

  • chopped scallions (you can chop a bunch and set aside for the next time you’ll serve the soup).

Directions:

  • Put the meat in a large bowl and cover with water for around 6 hours

  • Empty the bowl and rise two times

  • Place meat in large pot and fill with water

  • Add scallion heads and rice water

  • Place on high heat and bring to a boil. Then simmer on the lowest heat for 2-3 hours or until the beef short ribs are completely soft (you can poke it through with a chopstick and if it slides in very easily, then it’s done).

  • Prepare the noodles or sticky rice.

  • Remove the oil that surfaced to the top. This is hard to digest for many, especially those with gut issues.

  • Add scallions for garnish, rice or noodles, and a dash of salt and pepper to taste.

  • Serve and enjoy! This meal is best with a side of kimchi.
