This Sashimi Salad Is a Refreshing Energy Boost

As Someone Who Struggles With…

… constipation if I don’t incorporate enough prebiotics, probiotics, fiber, and non gut-blocking protein into my diet, I struggle finding delicious and nutritious meals for myself. Hwae Dup Bap (회덮밥) or Sashimi Salad Over Rice is one super quick, easy meal that I can always rely on and find is easy to digest. The protein from the fish fuels me for the day, and the fiber and carbs from the rice with the antioxidants and vitamins from the vegetables work together to provide what I think is a balanced meal. (Note: I’m not a nutritionist, just my own research). The sauce is what ties it all in together, it’s nutty, spicy, and sweet at the same time.

TOTAL TIME: 15 - 40 minutes (depending if you already have cooked rice or not)

INGREDIENTS: (Serves 1 — I live alone, so most of these are for one person)

  • 1/4 pound of assorted sashimi, bite-sized, pre-cut (You can likely find this assortment in H-mart in the seafood and add how much you’ll eat and freeze the rest for later. If you can’t find this, then slice sashimi thinly).

  • 1 tablespoon roasted toasted sesame oil

  • 1 teaspoon roasted toasted sesame seeds

  • 1-2 sheets of roasted seaweed, scrunch up with hands

  • 1 scallion, cut thinly

  • 1 bowl of freshly made cooked glutinous or brown rice.

  • 2-3 leaves of red lettuce, sliced thinly

  • 1-2 small cucumbers sliced into matchsticks

  • 1/4 medium onion tablespoons onion, sliced thinly

  • 1 or 2 red chili peppers, chopped (spicy)

  • Chojang sauce (sweet and spicy red chili pepper paste with sugar, rice vinegar, garlic, and sesame oil)

DIRECTIONS:

  • Chop the lettuce thinly and add it to a medium-sized bowl

  • Add the rice to the bowl on top of the lettuce

  • Add the sashimi to the bowl

  • Chop the cucumber thinly into matchsticks and add it to the bowl

  • Slice the onion thinly and add it to the bowl

  • Chop the chili peppers into diagonal slices and add it to the bowl

  • Add the chojang sauce, drizzle the sesame oil, drizzle the toasted sesame seeds

  • Scrunch up the roasted seaweed and cut up scallions and add

  • Mix and enjoy! Don’t forget to take a pic to savor its BEAUTY
